~ Have a blessed Easter ~

Hope you all have a nice Easter Sunday.

We plan to go to church and then have a nice lunch. This recipe is one of Mike's favorite side dishes and will go nicely with our Easter ham.

Monterrey Rice Bake

1 cup Uncle Ben's converted rice
8 oz. Monterrey Jack cheese
1 (4oz) can chopped green chilies
16 oz sour cream
grated cheddar cheese
jalapenos to taste.

Cook rice. Add Monterrey Jack cheese in small chunks. Let melt. Add green chilies and sour cream. Stir well and place in sprayed baking dish. Top with grated cheddar cheese. Bake at 350 degrees until bubbly and slightly brown, 25 t0 30 minutes. We have recently started adding jalapenos (the kind in the jar, a few chopped up and mixed in) and this time I put in about 1 T. of the jalapeno juice just to add a little more heat. Enjoy!
