Our little neighbor lady, Trudy, makes these sometimes for Mike when he is out working in the yard. They are simple~ great hot, uniced, with butter or try with honey butter. Yum Yum~
1/2 cup shortening
1 cup sugar
1 egg
1 1/2 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 cup milk
Batter will be lumpy. (They almost taste like a sweet cornbread.)
Bake at 350 for about 15 minutes.
Side note. If you are always throwing out milk that has gone blinky... then try organic milk. It is a little more expensive, but the shelf life is longer. I bought some at Walmart for $3.98 for a half gallon but it is good until 10/10. It will save us money in the long run.
