Yesterday, it was warm, in the 80's, but today brings temperatures in the 30's and drizzle, now rain. That's Texas for you! Gotta love it. We sure need the moisture though.
Here is a good cold weather recipe that I have cooking for dinner tonight.
Green Chili Stew, a recipe from Uncle John
3 T. olive oil
1 1/2 lbs pork, cut into cubes
2 to 3 onions, sliced
1 to 2 cloves garlic, minced
6 cups chicken broth
3 pototoes, cubed
2 (7 oz) cans green chilis
Fresh cilantro to taste, chopped
coarse ground black pepper
Brown pork, set aside. Then saute onions. Add garlic, return pork, add broth, potatoes. Boil, then reduce heat. Simmer 1 hour. Add green chilis and cilantro. Cook 20 minutes more. Enjoy!
